Camping + Good Friends + No Bears = FUN!

So since our good friends Eric and Ari are leaving to Malaysia for the rest of the summer, we've tried to squeeze in some fun times with them beforehand, but it's been nearly impossible since Cole and myself as well as Eric work a ton and since Ari has been busy with school. A few weeks ago we had them up for Sunday dinner  and to watch an NBA finals game (way to go Mavs by the way!) and that was fun, and this past week we decided we'd go camping one night - so we went last night! I'm not really the happiest camper, but since we have cool camping gear now and since Cole loves it I figured I better learn to love it too! 

This was attached to the table when we go to our campsite - definitely not what I  waned to see!

Cole was working away at putting up our tent as I watched...

And then when I helped it worked out good! He actually did most of the work... :)

We were SO excited to use our hammock that is for 2 people! 

Ari made yummy kabobs over the fire.

Cole was our entertainment for the night - sparklers in the fire and his made up songs kept us VERY entertained!

They decided to go "bear hunting." This is them in their get up. 

And Cole made breakfast burritos for breakfast before we left this morning! I wanted to warm my tortilla. :)

Ari did too, but she tried a different way. Haha! :)

And like he did all night Cole was throwing things in the fire and fishing them out with his hands so he did the same with his tortilla - he's so crazy! 
Cole decided to enjoy his burrito while relaxing in the hammock.

Eric loved the burritos - as you can tell by his face. 

And they tried to enjoy their burritos while both sitting in the hammock (upon Cole's request) but it didn't quite work out in their favor. Ari and I got a good laugh out of it though! I sure was glad I had my camera in hand when it happened!


As you can see we had a blast and made some good memories with Eric and Ari. We are so grateful for their friendship in our lives and look forward to making many more memories with them!

So we've tried this thing where we lay out a menu for the week so we know what groceries we need to make sure and get when we go to The Store or to Costco. It's worked pretty well so far! Last night for family night we made shish kabobs and grilled pineapple - it was SO yummy! Cole had scored some steaks for a cheaper price at work so we used those and bought some veggies to stick on as well. As far as the grilled pineapple goes, I did some research online and found a yummy way to make a marinade for grilled pineapple and it is definitely going to be a keeper in our cookbook! 

Here are some pictures of our yummy dinner and the yummy recipe that I found - enjoy! 

Ingredients:
1/2 pineapple cut into long spears
1 tbsp butter
1/2 c brown sugar
1 tsp cinnamon


Directions:
1. Mix cinnamon and brown sugar in a shallow bowl. Heat up the grill to medium heat. Before putting the pineapple down on grill, roll the spears in brown sugar and cinnamon mixture. This will bring out the sweetness and instant caramelizing when they hit the grill.

2. Heat the butter, brown sugar and cinnamon mixture in a pan, till hot and bubbly, brown sugar should be melted.
3. Grill the pineapple spears over direct heat about 2-3 minutes per side, turn occasionally. Each time it turns, baste with glaze. When finished, place on platter and drizzle with remaining mixture of butter, brown sugar and cinnamon..or you may dip it in while eating them.

Yesterday we decided to go on a fun little adventure up Lime Canyon, which is here in Midway! We went and got the 4 wheeler from Cole's parent's house and began our adventure. I was being a bit of a stink because I don't like to be cold AND I don't like when people drive crazy, but I will have to admit - I had a blast! The view we had from up in the mountains was absolutely incredible! It made me realize that I have been living in such a beautiful place for a couple of years and haven't even began to appreciate all of the beautiful creations that are surrounding me. Thank goodness I married a man who loves the outdoors so I can now have someone to share the beauty of this earth with! :)

This was one of the few road blocks that we experienced. 

We couldn't go past it soooo we took a picture with it! 


There were a couple of pretty meadows so we took advantage of them for some good photo opportunities. 

Yay for 4 wheelers! 

Cole found a clay pigeon! And attempted to shoot it...with his hand. :)

We had to duck under this crazy tree that was over the trail at one point!

The view from up on the mountain was seriously breathtaking! I still can't believe this is where we live.



Cole saw this tree and just had to climb up on it - he's crazy!

I liked that you could kind of see the sunset in this one, and that you can see how long the tree is that he was on!

Cole's favorite trees are these quaking aspens or "quakies." They were pretty prevalent on our trip and he loved it!

I love my life, I love the beauty of this earth that was created for us, and I love my husband.

Cole is a really big fan of both playing soccer and watching professional soccer. He's trying to teach me how to play and about the game and let's just say we're making slow progress. :)

However! We went to a Real Salt Lake game with our friends Heather and AJ and had so much fun! I never knew we had a professional soccer team right here in Utah until I started to date Cole. Honestly I didn't even know that we had a pro soccer league in the US until we started dating. It's so neat how when you bring two lives together you learn more and more every single day.

Summer Adventures

Even though we're both busy working this summer, we still make time for fun! I FINALLY convinced Cole (with the help of Nick) to go country dancing! We went to Sammy's and then met up with Nick and his cute girlfriend Tamra to learn some cool swing country dance moves! We're not pros just yet, but we weren't too bad either! I was glad to have an occasion to wear my boots. :)








We also went on a date to Bucca di Beppo in downtown Salt Lake. It was a yummy Italian place that we plan on going back to!





And this is us waiting outside for the midnight premiere of the 4th Pirates movie. I didn't see much of it cuz I am not the best at staying awake for movies late at night, but it was still fun!






I am still as in love with Cole as before we got married - in fact I feel like my love for him grows each and everyday. How could it not?! He's amazing and I count him as one of my many blessings in this life. :)
